If you want useful help on a sensor chain, include the sensor type, excitation or biasing, signal range, ADC path, sample rate, and the calibration goal.
Without that context, it is hard to tell whether the issue is a sensor problem, analog front-end problem, timing problem, or software interpretation problem.
